  1. Soften. Warm the oil in the pot over medium heat. Cook the onion for 5 minutes, then the garlic for 1 more.
  2. Brown. Add the turkey and break it up. Cook until no pink remains, about 6 minutes.
  3. Toast the spices. Stir in the chili powder, cumin, paprika, oregano and salt. Cook for 1 minute.
  4. Simmer. Add the tomatoes, beans, broth and sugar. Simmer uncovered for 30 minutes, stirring now and then.
  5. Taste. Adjust the salt and heat before serving.

Scaling note. Spices are scaled exactly here, but heat builds in a big pot. Above double, start with three quarters of the chili powder and add the rest after tasting.
